Lots of people would probably agree that I spend a lot of time in a kind of mental wonderland. Yesterday I bought a mushroom that was so enormous that I almost believed that I was actually there...... even Alice's caterpillar friend would have been proud of it !

Perfect for Mother's Day Brunch. It made the most amazing brushetta along with the bread we got yesterday from The East Oxford Farmers Market.Really simple to make. You just toast the bread and then rub it with a clove of garlic. 

Meanwhile pour a little olive oil into a frying pan and cook a peeled diced tomato (per person) diced mushroom, the rest of the garlic clove, minced or sliced thinly and a birdseye chilli. Season with sea salt and freshly crushed black pepper. Top the toast with these yummy ingredients add a little fresh basil and it's ready...as easy as that.......
