Baked Eggs with Creamy Nutmeg and Spinach


I picked up a recipe card for Baked Eggs with Creamy Nutmeg and Spinach in Waitrose last week. I love both eggs and spinach, and this looked like one of those comfort nursery type recipes for a rainy day. We had one or two of those last week and so I raided the fridge to see if I could have a go at making it. I'm really glad that I did. It truly has a big comfort wow factor.....it reminded me of something I'd eaten somewhere in the past, but I couldn't quite place it. I kept getting flash backs of Paris, but not an exact memory. I think I must have had something similar in one of those little bistros there, that serve snacks like croque monsieur. It is a bit of a hastle to make because you have to cook the spinach first and then refresh it and bake the dish in a water bath. But it is really worth making if you feel like indulging yourself with a little homely pampering. When you push your fork into that creamy cheesy topping and the egg bursts and a little river of warm salty egg yolk runs out, it can rain all it likes.....although I even find something a little comforting about the sound of rain drumming on the kitchen window.
You can find the recipe here if you'd like to make it. I substituted the creme fraiche with low fat yoghurt because that's what was in the fridge and the cheddar with grated parmesan, and it worked really well. Oh and I couldn't find my nutmeg so didn't use any.

  1. Wow, that sounds divine. Can't wait to try it. I made spinach gratin yesterday. Also comfort food. Steam spinach. Saute leek in butter add spinach. Add lots of cheese - I prefer feta. Sooo good.
