Alternative Sunshine Salad...maybe I could call this one Sun Ray Salad.......Sweet potato, beetroot, red pepper, tomato, broccoli, cucumber, iceberg lettuce, baby black olives, sauteed garlic mushrooms, hard boiled egg, sunflower seeds. A little bit of seasoning and dressed with pumpkin oil and balsamic vinegar.
