Chicken Breast with Pesto and Palma Ham








This is a very quick supper dish to make when you're in a hurry. You will need one chicken breast per person, beaten so that it's flattened out and will roll easily, and also so that it cooks quickly. Palma ham to wrap the breast in to form a parcel. Pesto sauce and creme fraiche. Or like me you can use natural yoghurt.Mix pesto sauce (shop bought is great if you're in a rush to go out, as I was last night) with a little creme fraiche. Lay a couple of pieces of Palma ham onto a plate and the flattened breast on top.

Place a big spoonful of the mixture into the middle of the breast. Roll up and then place in an oven proof dish and drizzle with a little olive oil. Then bake in the oven for 20 to 30 minutes at 180c, depending on the size of the chicken breast.
When it's cooked the bacon should be a little bit crunchy and the chicken moist with the pesto mixture beginning to ooze out a little and make a tasty sauce that you spoon over the meat. This is so easy to make...I don't usually eat red meat but couldn't resist having a little bit of the Palma ham it's so tasty. 

This is nice served with seasonal vegetables and spicy potato wedges. Simply made by peel and slicing potatoes into big chunks par boil them for a few minutes, but not too long so that they begin to break up. Season them with whatever spice you like, paprika is good or crushed garlic or chilli both with sea salt and black pepper, spray or drizzle with a little olive oil and then you simly bake them in the oven along with the chicken.

Easy.......
