Spring has sprung and the asparagus season has begun




It's now officially British Asparagus season and I couldn't resist this little bundle.  Especially as it had a third off!

It was so tender that it didn't even need cooking.  It made a perfect crunchy dip for  softly poached eggs. Served atop quinoa cooked with sweet peppers and a little of the asparagus.  Eaten with Mast Esfanaj, Persian spinach and garlic yoghurt that goes perfectly with any kind of eggs.

Spring has definitely sprung...!

  3. I didn't know you could eat asparagus raw! that looks really really good. I have a weakness for runny yolk.

    1. I eat most vegetables raw Shu Han when they are young and fresh I can't resist...except for potatoes! I just googled to check that it's ok to do so and apparently it's fine, asparagus is even more nutritious when raw.

      I'm a big egg consumer too...we have a friend who supplies us with amazing fresh organic ones still covered in feathers and bits of straw!

    1. I agree Caz, everything tastes so much better when it's in season. I can't bare to eat tomatoes in the winter over here as they have no flavour at all.

      I cheated a bit with the broad beans that I forgot to mention were also in the quinoa. I can't wait for the broad bean season...they are frozen though so next-best-thing as apparently it's done minutes after they are picked from the plant so still full of flavour and nutrition...

      Roll on broad bean harvest time...

  6. Thanks Lucy. I know...I creepily sneaked back in didn't I?

    Actually I lost quite a number of hours at work along with everyone else...reduced by 2/3rds! The recession is hitting everyone hard over here. So I currently have lots of time for extra researching etc and have treated myself to a bit of blogging too...
