Chili prawns with coconut milk


'S' wanted to share a recipe that she made with her boyfriend at the weekend. She stresses that it is his recipe and not hers so she doesn't want to take the credit but that it is extremely yummy.........

you will need:
2-3 red chilies chopped finely
1 red onion, chopped
4-5 cloves of garlic, crushed or chopped
a piece of fresh ginger, grated
1 tsp turmeric
1 cup of water
2 chopped tomatoes
1-2 cans of coconut milk
enough fresh prawns for
fresh lemon or lime juice
freshly ground sea salt and black pepper
spring onion to garnish
a handful of fresh coriander
To make:
.fry the onion until soft
. add the ginger and after a little while garlic
. remove the stalks from the coriander, reserving the leaves. Chop the stalks finely and then add to the sauce.
. add the chili, salt pepper and turmeric, then add 1 cup of water, leave it to boil for a few minutes
. reduce the heat and then add the coconut milk and prawns. Cook for a further few minutes until the prawns have turned pink and are cooked through. Add the coriander leaves.
. Serve and top with the spring onions.
