My version of Gordon Ramsey's fennel with feta, flat bread lunch


This is my version of Gordon Ramsey's fennel with feta,flat bread recipe. Instead of using flat bread for lunch I made open sandwiches with warm brown bread. Finely sliced small fennel bulbs, then crumbled lovely salty feta cheese on top, big slices of my heritage black russian tomatoes from the garden, drizzled with lovely sweet/sour pomegranate molasses and then sprinkled with pomegranate seeds. This sandwich is just as delicious at it is beautiful to look at.  Thanks to G.R. I will definitely be using pomegranate molasses for more than just fesanjune in future.  This was a 10/10 lunch...mm...mmm...

  4. Oh thanks you Paula. Pomegranate molasses makes the most amazing dressing...I highly recommend it. I love it straight from the bottle but you can also make a dressing by adding balsamic/cider vinegar, fresh lemon juice, olive oil, crushed garlic and salt and pepper. I haven' tried it that way yet will definitely be experimenting with it a lot more.

    You must try it Caz...I'm obsessively putting pomegranate molasses on everything we eat at the moment...I must curb my enthusiasm...It's not at all balanced.
