Weekend came and so did gingerbread weather, cornflake leaves and icing sugar frost. Warm cooking smells of treacle and spices, Jerk Chicken, Rice and Peas.
Watching small furry thief in next doors' garden steal bird nuts for his winter store...Then began our preparations...
- Stocked the larder with 3kg honey and 5 of pizza flour.
- Bought fabric to line quilt, half-made years ago.
- Learned how to wrap and turn a sock.
- Planted Amaryllis bulb for Christmas day.
- ...and listened to this...
225 softened butter
175g light Muscovado sugar
200g black treacle
300g self raising flour
2 tsp baking powder
1 tsp ground mixed spice
1 level tsp ground allspice
4 large eggs
4 tbsp milk
3 bulbs of stem ginger from a jar finely chopped
Preheat the oven to 180c, place all the ingredients in a large bowl and mix for a couple of minutes until combined and then place in a lined baking pan. Bake for about 35-40 minutes.

how funny----I had out the molasses this weekend for a gingerbread/blueberry cake I love, and never got around to it....it's slated for early this week!!!! Nothing better than the smell of gingerbread in the fall!!!! I need to get some amaryllis planted, too! Thanks for the reminder!

I know I hadn't made it for ages either and then around bonfire night I just remembered how mum would make gingerbread and treacle toffee and sausages baked on a bonfire and baked potatoes too...then I had to make some as well.

DeleteI have a huge thing for the flavour of treacle and molasses right now. it's my healthy sweet fix. what I wouldn't give for some gingerbread right now. the weather is getting chillier, but the sun is shining and makign everything golden and i wish I could be outside enjoying that, or cookign up a storm in the kitchen. alas, will focus on my dissertation right now .. argh why am I even reading blogs :( (sorry couldnt resist when I saw the title)
