Lemony Snicket of a cake

A Lemony Snicket of a cake that's so simple to make that even Sunny Baudelaire could make it.....mind you she is a very clever little girl!
This has got to be the simplest cake recipe I have ever made. You just put all the ingredients, wet and dry into a big bowl and mix them together for a couple of minutes. Bake for 35 to 40 minutes at 160c/325F/Gas mark 3 and then drizzle with lemony syrup......


You'll need:
. 225g/8oz of softened butter
. the same amount of caster sugar
. 275g of self-raising flour
. 2 teaspoons of baking powder
. 4 eggs I used some from a friends chickens, you see how lovely and yellow the cake is....
. 4 tablespoons of milk
. finely grated zest of two unwaxed lemons
. and I add a little vanilla extract too

and for the topping:
. the juice of the lemons
. 175g/6oz of granulated sugar

you'll need to line a 23x30 baking tin with paper and fill with the batter. This is a flat tray baked cake and should be golden brown and springy to the touch when cooked. Cool in the tin for a few minutes and then remove the paper and put onto a wire rack and glaze with the combined lemon juice and sugar. It's best to do this over a tray cos it gets a bit messy........


This is just a lovely plain lemony moist sponge......the kind you see for sale on the WI stand at the Farmers Market........
