Simple Supper




Do you find that when you're busy that you tend to resort to making the same recipes over and over again? I do. Things like big pots of minestroni soup or bowls of salads with quinoa or couscous that last a couple of days in the fridge.
So I was really pleased to pick up Waitrose magazine with recipes for '5 Family Suppers.' Especially as the first one had an image of a big bowl of Rocket Pesto with Peas and Tomatoes with one of those yellow scotch notes on it saying 'Keep it simple on Monday'......my sentiments exactly.
I have made pesto once before using Nigel Slater's recipe for basil pesto that you hand grind in a pestle and mortar which was delicious. It was nice to be reminded just how simple it is to make, and this version with lemon zest and rocket really packs an amazing herby/ lemony punch and makes the kitchen smell wonderful....Spring on a plate.....it really is like stepping into a herb filled meadow...
You can link here to the recipe if you'd like to make it. Basically you just cook your pasta as per the instructions adding frozen peas in the last few minutes. Meanwhile whizz up lemon zest and juice, leaves (I also used some watercress as well as rocket), grated Parmesan cheese and a little olive oil. I didn't have any sundried tomatoes so substituted a handful of pine nuts instead. This really is a very easy lunch or supper dish and will be making this regularly from now on..... A lovely Spring dish......

  2. Just lovely ... I always fall back on tried and tested recipes when I'm busy ... and I'm pretty much a fan of anything pasta / grain / pesto related ... YUM! :)
