A Subtle Twist on Nigel Slater's Black Banana Cake

A great way to use up overripe bananas is Nigel Slater's Black Banana Cake Recipe. Especially as it also has chocolate shavings in it. On Simple Suppers he served it with cinnamon sprinkled yoghurt. I decided to add the cinnamon into the cake batter and also a little grated ginger. This was because I was tempted to use Green & Blacks Dark Chocolate with Ginger but thought better...it's a treat on its own...and so used Plain Divine Chocolate, adding the ginger. I also used wholemeal spelt flour for this and I didn't shave the chocolate but cut into tiny chunks. The result was a lovely moist cake with a hint of earthy cinnamon and ginger and the added treat of little oozy chunks of chocolate every now and then...yum...
