First Autumn Weekend of the year and Foraged Blackberry Cake

Nice pottering weekend...no big plans...no visitors just time to catch up...

...and make Blackberry Cake with berries foraged from the woods

Ingredients:
  • Fresh blackberries
  • 5 oz/125g  of sifted self raising flour
  • 4 oz/100gs of butter or  substitute
  • 4 oz/100g of moscovado sugar...(I always think that sounds Russian !)
  • 2 beaten eggs
  • 2 tablespoons of milk or substitute
  • Vanilla and almond extract
  • A little extra butter and sugar to line the base of the baking pan
Method:

  1. Remove any little inhabitants from the blackberries and wash in cold water.
  2. Butter the bottom of a cake pan, sprinkle with a little sugar or honey and then place the blackberries on top
  3. Put all the remaining ingredients into a baking bowl and mix really well until everything is blended together. 
  4. Pour the batter over the blackberries
  5. Preheat the oven  160c/325f/gas mark 3.  Bake the cake in the middle of the oven for 30 to 40 minutes. 
  6. Allow to cool in the tin.
This is lovely eaten still warm from the oven with yoghurt or ice-cream or delicious just as it is...mmm...

Inspired by this I went on a foraging bike-ride down the Northumbrian lanes this afternoon, found some blackberries (and got scratched and wounded by all the brambles, but it's worth it), and made this cake - it is delicious! Thank you for the recipe and the autumnal inspiration. What a beautiful time of year

    You're welcome. I'm so pleased that this post inspired you...

    I know it's a shame about all the scratches. Those blackberries really fight back don't they? I'm glad that the recipe worked for you too...I'm always a bit worried that my recipes will fail when tried by others.

    It's been an amazing start to the autumn here...it was 30 degrees at the weekend...unbelievable...but they say snow is forecast this month too...so we've been madly collecting all the apples from the garden before they get ruined...looks like I'll be making lots of apple pies and cakes...

    Enjoy the rest of the autumn...hope you have lots more lovely afternoons...

    Thanks, it was a lovely calm weekend after a lot of really busy ones.

    The book is amazing. I bought a copy for one of my sisters' birthday presents and couldn't resist getting one for myself. It's called 'The Frugal Forager: Living off your local landscape,' written by Alys Fowler and published by Kyle books ISBN 9781856269124

    I love Alys Fowler, she is a quirky gardener/writer/TV presenter. She was brought up on a farm, studied in the UK and US, living in Brooklyn for a while where she developed a passion for urban foraging. The book is really informative and helps you to distinguish edible plants as well as having a couple of recipes to try out too.

    I'm a bit obsessed with reading it at the moment and find myself spotting edible plants where-ever I am, and what-ever I'm doing...
