One Day a Week Vegan




There have been lots of vegan days just no time to write about them. Life is busy but fun. At last the table was clear enough to sit down for supper in time to celebrate H getting a job in a publishers. That was until 'A' heard a noise that I put down to the washing machine...until I saw big drops of water gushing down the wall!  I'd totally forgotten that I'd left a jumper rinsing in the bathroom sink...I'd also forgotten to turn the taps off!  There was a  mad panic rush for towels and a few hairy moments but everything was soon mopped up both upstairs and down and thankfully no major damage done.  

Supper was a repetition of a recipe that once made has become a firm favourite. Sophie Dahl's chick pea/garbanzo bean burgers. I rang the changes a little by using a mixture of chick peas and my favourite black eyed beans.  I love their smoky flavour. 

I served them with a warm seasonal salad:

Ingredients:

  • Salad leaves or one small lettuce of choice
  • One small thinly sliced red onion
  • Fresh garden peas
  • Broccoli florets or sprouting broccoli 
  • A handful of mushrooms sliced thinly
  • One sweet pepper  ditto
  • A couple of sliced tomatoes 
  • A clove of garlic
  • Sea salt and black pepper
  • Honey mustard dressing
Method:
  1. Cook the onions in a little oil with crushed garlic and a little sea salt and black pepper. Whoops that should be mushrooms!
  2. Cook the peas in boiling salted water or alternatively use raw.
  3. Steam the broccoli (if not using raw)
  4. Combine all the ingredients and dress with the honey mustard dressing.
Lunch was a quick sandwich of a simple guacamole made by mashing ripe avocado with lemon juice, salt and pepper. Piling up on good bread and then topping with salad vegetables of choice.

Desert:  These busy days I've been grateful for the abundance of amazing fruit...the perfect sweet end to any meal.

Edit: Busy breakfast was homemade granola with almond milk...mmm...

  2. It's not the first time either!! Although we all giggled, husband wasn't very happy at the time and muttered something about wet-rot and damage to the floorboards...

    Thank you Tracey. I'm so pleased about her job because although it's temporary as Hannah is only planning to stay in Oxford for six months there could potentially be a full time job either here or in London. (I keep silently hoping for Oxford)

  3. Love avocados these days and I'm glad I'm not the only one. Love your salad and that burger recipe looks delicious! How could you forget you were running water??? Glad there was no damage.

    The problem is I always do too many things at once and don't do any of them properly! I must learn to do one thing at a time....

    You took the words out of my mouth. I think multi-tasking is a terrible burden, I am forever doing too many things at once and getting stressed about all of them.
    Great news about your daughter's job and I love the sound of those burgers!
