The first batch of elderflower cordial is now happily brewing and will be ready to drink tomorrow. I made it today with this recipe but used golden caster sugar so it's much darker in colour than last years. As soon as the rain eases off a little I'll collect more blossom...if it hasn't all blown away. I want to experiment with alternative sweeteners. I've found this video recipe here...If you watch you'll see that making elderflower cordial genuinely is child's-play...it it so easy to make. This one is a raw version so you don't even have to boil water and uses Medjool dates instead of sugar or agave syrup. Happily H just brought us a big box when she stopped over a couple of nights ago on her way to Download Festival...they are deliciously yummy...best go and make some more cordial before they all get eaten...

I'm waiting for a pause in the rain to collect my elderflower too. At this rate I may just have to run for it! Such a lovely cordial. We go through several batches of it every year.
ReplyDeleteMy first batch was gathered in the rain yesterday Cheryl and I know that you are supposed to do so in the sunshine but I was afraid they would all get washed away before I had a chance to collect them!
ReplyDeleteI hope that you gathered and made yours successfully it must be lovely to have a little hoard of cordial for the winter. Last year was my first attempt at making any and I only brewed one bottle. I have been collecting bottles all year in anticipation of this years harvest.

Wow! I've only had the elderflower cordial from ikea! I'd love to make my own but as I'm in Saudi Arabia, I don't think I can. But ... I wonder if it grows in North Africa! as I'll be moving over to that part of the world, maybe I can do this there! Excited at the thought of it :)
ReplyDeleteHi there...thanks for coming over and commenting. I've just done a quick google search and it seems that the elderflower is native to North Africa so hopefully you will be able to make some. It is so easy and delicious and supposed to be very good for you.
